Crystallization is natural and actually a sign that honey has not been heavily processed. It occurs when glucose separates from the solution and forms crystals, which happens faster in cooler temperatures or with high-glucose honey varieties. Heavily pasteurized or adulterated honey often does not crystallize at all. To liquefy it, place the jar in warm water. Crystallized honey is not spoiled.
Start with the ingredients list. Pure honey should have only one ingredient: honey. Avoid products labeled "honey blend" or listing added sugars or glucose syrup.
